1 package (16 ounces) pound cake mix
1/2 cup milk
1/2 cup mashed ripe banana (about 1 large banana)
2 eggs
1/2 cup flaked coconut
Method
Preheat oven to 350°F. Lightly spray, bottom only, of a loaf pan with
vegetable oil.
In bowl, combine cake mix, milk, banana, and eggs; mix well. Stir
in coconut. Pour into prepared loaf pan. Bake 55-60 minutes or until toothpick
inserted in center comes out clean. Cool in pan on a nonstick cooling rack for 15
minutes; loosen edges with knife. Remove from pan; cool completely.
Optional topping:
6 kiwifruit, peeled and sliced
Vanilla ice cream
1/2 cup apricot or pineapple preserves, or orange marmalade, warmed
Slice kiwifruit. For each serving, top cake with kiwifruit slices, ice cream and
preserves.
